The core of the research program is based on the important role of carbohydrates in digestive physiology and nutrient utilization. On a basic level, this unique class of dietary nutrients influences digestion, absorption, and microbial flora in the gastro-intestinal tract, and consequently endocrine activities and nutrient utilization. Research is divided up into 3 areas: 1) the impact of carbohydrates on digestive physiology, 2) characterization of nutritional and functional properties of ingredients, and 3) rapid evaluation of nutritional quality. Practically, dietary carbohydrates are capable of altering intestinal health of swine and may function as a functional food.
